  1. 1 large plantains (green or yellow, both works but the taste will be different)
  2. 2 large pastured eggs
  3. 1 tbsp coconut oil
  1. Preheat the oven at 350F.
  2. Blend all ingredients in a blender.
  3. Pour in a greased 8X8 baking dish.
  4. Bake for about 20 minutes or until a toothpick inserted in the center comes out clean.
  5. Enjoy as is, spread with butter, grill as a toast or use to make a sandwich.
  1. You can also double the batch and adjust the cooking time to around 30 minutes.

    Thank you for all your posts! They are very informative. I want to try your Radicata bread, but it would be my first time buying plantains. How do I select them at the grocery for this particular recipe? Do I have to guide myself by the apparience or touch?

    • Hi Clarissa! I’m so glad you’re going for it! I would try to select plantains that are on the greener side but even more ripe plantains could work too. Think of it as choosing a banana. 🙂
